Ingredients
Ingredients for Kulcha Dough:
- 2 cups All-Purpose Flour (Maida)
- 1/2 cup Yogurt
- 1/4 teaspoon Baking Powder
- 1/4 teaspoon Baking Soda
- 1/2 teaspoon Sugar
- 1/2 teaspoon Salt
- 2 tablespoons Oil
- Water (as needed for dough)
- Ghee or Butter (for cooking)
Ingredients for Stuffing:
- 2 large Potatoes (boiled and mashed)
- 1 Green Chili (finely chopped)
- 1 teaspoon Coriander Powder
- 1/2 teaspoon Red Chili Powder
- 1/2 teaspoon Amchur (Dry Mango Powder)
- 1/2 teaspoon Garam Masala
- Fresh Coriander Leaves (finely chopped)
- Salt (to taste)
DIRECTIONS
- Prepare the Dough: In a large mixing bowl, combine the all-purpose flour, baking powder, baking soda, sugar, salt, and oil. Add yogurt and mix well. Gradually add water to knead the dough until it’s soft and smooth. Cover it with a damp cloth and let it rest for at least 1 hour.
- Prepare the Stuffing: In a separate bowl, mix the boiled and mashed potatoes with chopped green chilies, coriander powder, red chili powder, amchur, garam masala, coriander leaves, and salt. Mix well and set aside.
- Stuff and Roll the Kulcha: Divide the dough into equal-sized balls. Roll out each dough ball into a small circle. Place 2 tablespoons of the potato stuffing in the center and gently bring the edges of the dough together to seal it, forming a ball. Carefully roll the stuffed dough into a round or oval shape using a rolling pin.
- Cook the Kulcha: Heat a tawa (flat pan) on medium heat. Place the rolled kulcha on the hot tawa and cook until bubbles start to form on the surface. Flip the kulcha and apply ghee or butter on both sides. Cook until both sides are golden brown and crispy.
- Garnish & Serve: Brush the kulchas with some more butter or ghee, and garnish with chopped coriander if desired. Serve hot with Chole, yogurt, or pickles.
NOTES
Few Swaps:
- Use whole wheat flour instead of refined flour (maida) for a healthier, fiber-rich version while still keeping the kulchas soft.
- Replace butter or ghee with olive oil for greasing the kulchas, reducing saturated fat content while keeping the flavor.
- Add grated veggies (like carrots or spinach) into the stuffing to increase the nutritional value and create a more filling meal.
