Ingredients

For the Kadhi

  • 1 cup gram flour (besan)
  • 4 cups yogurt (whisked)
  • 1 medium onion (sliced)
  • 2 medium tomatoes (chopped)
  • 2-3 green chilies (slit)
  • 1 teaspoon ginger-garlic paste
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon mustard seeds
  • 2-3 tablespoons oil
  • Salt to taste
  • Fresh coriander leaves (for garnish)

Vegetables (optional)

  • 1 cup mixed vegetables (like potato, carrot, and green beans)

DIRECTIONS

Prepare the Kadhi Base

  • In a bowl, mix the yogurt, gram flour, turmeric powder, red chili powder, and salt. Add water gradually to make a smooth mixture.

Cook the Vegetables (if using)

  • In a pan, heat a tablespoon of oil. Add the mixed vegetables and sauté for a few minutes until they soften. Set aside.

Temper the Spices

  •  In a large pot, heat the remaining oil. Add cumin seeds and mustard seeds. Once they start to splutter, add the sliced onions and sauté until golden brown.

Add Tomatoes and Chilies

  • Add the ginger-garlic paste, chopped tomatoes, and slit green chilies. Cook until the tomatoes soften

Combine the Mixture

  • Pour the yogurt and besan mixture into the pot. Stir well and bring it to a boil. Reduce the heat and simmer for about 15-20 minutes, stirring occasionally to prevent lumps.

Add Cooked Vegetables

  • If using, add the sautéed vegetables to the kadhi and cook for another 5 minutes.

Final Touch

  • Adjust the consistency by adding water as needed. Taste and adjust the salt. Garnish with fresh coriander leaves

Serve

  • Serve hot with steamed rice or chapati.

NOTES

Few Swaps:

  1. Replace regular gram flour (besan) with roasted besan for a deeper flavor and quicker cooking time, as roasted besan absorbs less oil.
  2. Use olive oil instead of traditional ghee or vegetable oil to reduce saturated fats and make the dish lighter.
  3. Add more vegetables like spinach or sweet potatoes for additional fiber, vitamins, and a twist on the traditional recipe.
